My opinion: return to the 24th century and make something more like a follow-on to TNG/Voyager/DS9. Go back to making 20 episodes a season, so that you can lower the stakes a bit. Which also means ceasing to spend tens of millions per episode. It might even be best to return to the planet-of-the-week format.
Strange New Worlds actually did some of that, and I'm sorry to see it ending. But as a prequel, we knew where it was headed. It had to reach its destiny.
The hard part is capturing the lightning in your casting. Star Trek has always depended on great chemistry, usually built around a captain who really clicks with the audience. It's hard to find, but they've done it several times. And when Treks didn't work, it's often because people just didn't love the crew chemistry.
