How do you handle Global Tax (VAT, GST, etc.) when using Stripe?

I know there are Merchant of Record services like Paddle, Lemon Squeezy, Gumroad, etc. but Stripe is definitely superior in my mind.

And Stripe Tax is great, but doesn't handle the actual remittance part. Curious how other folks are handling this issue?

Check https://www.avalara.com/. You give them a list of products and/or services, the location of the buyer, and they tell you the taxable amounts for each item. It's all via API so can be built into your cart and checkout easily.

By hiring an accountant that can handle global taxes for us?

    Yeah, makes sense. Do you have a rough idea how much that costs every month?

      You call an accountant and find out. I pay 30$ per month, someone in another country may pay $300-3000+ per month. It also greatly depends on your revenue and other factors.
